But oh well, this blog IS called Quick and Easy Recipes. So okay, we'll just compromise and call it a Banana Pudding Method.
I've called it "Easy as Simple" after a phrase my daughter used when she was 4. She said something was "as easy as simple" - I don't remember what she was talking about, but the phrase was so cute and stuck in my mind!
You will need:
- 1 Lg pkg Jello Brand Vanilla Instant Pudding (you will be mixing this according to package directions, so you will also need 3 cups milk)
- 2 medium to large very ripe bananas
- Vanilla Wafers
- Cool Whip, or other brand of non-dairy whipped topping, defrosted (Cool Whip Free is great if you want to reduce fat and calories)
In a separate bowl, mix the Milk with the Vanilla Instant Pudding together with a whisk for 2 minutes.
Pour some of the pudding over the vanilla wafers that you already put in the dish. Slice one of the bananas and scatter the slices over the top of the pudding. Pour a little more pudding on top of that. Spread some of the non-dairy whipped topping over the top.
Repeat as many times as you have room in the dish to do so!
If you want to have a fancy finished look to it, you can end with the whipped topping and crumble up some vanilla wafers in your hand and sprinkle over the top, and/or you can take a couple vanilla wafers and stick them in the middle of the top vertically, so it looks like the letter "V."
Or, a vanilla wafer butterfly. Whatever. :)
"Technically," this should serve about 6-8. But if you are a realist or you are having a lot of people over, just double this up. Certain people (ahem....me) eat more than we should.
