I wish I could remember where I found this recipe. It is very good for using up almost any kind of leftover vegetables or meat you have.
Crust:
2 cups rice, cooked - white or brown
1 egg, beaten
1 tsp soy sauce
Filling:
1/2 lb of any leftover vegetable, chopped (it can be a single type of vegetable or a mixture)
You may want to add some chopped onion to this for flavor
4 eggs, beaten
1-1/2 cups milk or light cream
1 cup cheese, grated (your choice: Swiss, Cheddar, Pepper Jack, etc)
1/2 tsp salt (optional)
1/8 tsp pepper
Dash of nutmeg or ground mace
For crust, mix together cooked rice, egg, and soy sauce. Spread it evenly to cover well-buttered quiche pan or pie plate. Bake rice crust at 350 degrees for 10 minutes. (My recipe says to remove it from pan at this point, but personally I'd leave it in the pan!)
For filling, place chopped vegetable and/or meats in bottom of crust. Mix together eggs, milk, salt, pepper, and nutmeg. Pour over the vegetable and/or meats. Top with grated cheese. Bake at 350 degrees for 45 minutes, or until set. Remove from oven and let it sit for 10 minutes before slicing. You can also wrap it up, label it, and freeze. The quiche can be served cold after thawing as a nice hot weather food, or you can heat the thawed quiche at 350 degrees for 20 minutes.
