Preheat greased griddle to 400 degrees
1 c. old fashioned oatmeal
2 c. water
1/4 tsp. salt
Microwave for 5 min. on high in large bowl
Sift 2 c. flour and 2 tsp. baking powder. Add mixture and 1/2 c. sugar or Splenda to bowl.
Combine 4 eggs, 2 tbsp. peanut oil and 2.5 c. (diet) ginger ale and add to large bowl to make batter.
Makes 18-24 pancakes.
Dave adds: "Interestingly, they're not "lumpy" from the oatmeal, but have a very smooth consistency... You can make variations by adding other sorts of cooked cereal as well, like Wheatena or Cream of Wheat."
