Shepherds Pie

This recipe comes from Melissa, one of my clients.

Shepherd’s Pie Recipe

Ingredients:

½ - 2 lbs ground beef or lamb
3 Tbsp breadcrumbs
2 tsp Worcestershire sauce
2 tsp chopped onion
½ tsp garlic powder
salt/pepper or other seasoning of choice to taste

1 can beef broth

8 cups mashed potatoes, from scratch or boxed (to save time)

2-4 cups corn, frozen or canned


1. Prepare mashed potatoes

2. Boil corn

3. In a large mixing bowl, combine the beef, breadcrumbs, Worcestershire sauce, onion, garlic powder and salt/pepper. Thoroughly mix ingredients.

4. Preheat oven to 400 degrees

5. Using a large frying pan, brown the ground beef mixture. Once the meet has browned, turn temperature to low and add ½ cup beef broth, then simmer for 10 minutes. Add additional broth as necessary to keep beef moist.

Note: If desired, add other vegetables, such as peas and carrots when you add the beef broth,

6. Add beef mixture to a deep casserole dish and spread evenly.

7. Add a thin layer of corn on top of the beef mixture and spread evenly.

8. Add the mashed potatoes on top of corn and spread evenly. Rough up with a fork so that there are peaks that will brown nicely

9. Cook in 400 degree oven until bubbling and brown (about 30 minutes). Broil for last few minutes if necessary to brown.

Note: If desired, sprinkle shredded cheese over the top and broil until melted (1-2 minutes).
