Snellville Meat Loaf Recipe

Snellville Meatloaf
This is what it will look like when it's finished. It will become a cartoon. Hopefully it won't turn out white on the inside like this example. This one is, frankly, a little scary. And who leaves uncooked eggs and half cut up onions just lying beside a meatloaf? Who moves their meatloaf over to a wooden cutting board? Who are we trying to impress here? Well, these are all questions for another time. Perhaps discuss this while you are eating meatloaf.

INGREDIENTS:
2 lb ground beef (I use 80% lean)
2 eggs
2 slices bread (kind of old bread works better than very fresh)
1/3 cup ketchup
1/2 cup hot water
1/2 package (1 envelope) Lipton onion soup
1/2 cup chopped green pepper*
1/2 cup chopped onions*

*Optional.

Mix all ingredients. Put all in greased loaf pan. Pack it in there :)
Bake at 350 for 45 minutes. Top with ketchup and continue baking for 15 minutes more.

Money Saver/Time Saver: Buy green peppers when on sale. Chop them, put into resealable baggie. Refrigerate until cold. If you don't have freezer bags, put that baggie inside another then place in freezer. This prevents that 'freezer burn' taste. You can do the same with onions. Saves money and time. When you need either chopped onion or chopped green pepper, you can just measure out the amount you need.
