Irish Soda Bread

Serves 10. Baking time is 45-60 minutes for this. Measure all ingredients carefully. Remember, dry ingredients should be measured in DRY ingredient type cups, not the type with a spout that you use for liquids. Spoon dry ingredients into the dry measuring cups. Use a knife to shift off the dry ingredients from the top of the measuring cup so it's level.  Measure the milk of course in a liquid measuring cup & be sure to set it on the counter so you can bend and look at it to make sure it's level.

Don't forget to preheat the oven at least 10 minutes at the correct temperature listed below for your type of pan.  All this is a little extra "work," but it's worth it in the end.

3 cups flour, sifted
3 tsp baking powder
1/4 tsp salt
1/2 cup sugar
1 cup raisins
1 egg
1 & 1/4 cup milk
2 TBSP unsalted butter, softened

Mix all dry ingredients together by hand in one bowl. Mix egg and milk in another bowl. Combine wet and dry together, then add butter.

Pour into a greased 8" square baking dish. Sprinkle sugar on top and bake at 375 degrees (350 degrees for glass baking dishes) for 45–60 minutes.
