4 medium sweet potatoes, about the same size
Vegetable oil
Butter
Brown sugar
Cinnamon
Scrub sweet potatoes, brush or rub each with vegetable oil. Arrange potatoes on oven rack and bake at 450 for 35-45 minutes, or until tender.
Remove at once & prick each with a fork to let steam out. Cut a 1-1/2" cross in center of each potato.
Hold each potato with a pot holder & press/squeeze potato upward until filling comes out through the cuts.
Top wuth butter & mixture of brown sugar & cinnamon.
Other varieties you can try are salt/paprika & cinnamon with white sugar.
