Easy as Simple Banana Pudding

I feel almost embarrassed to post this banana pudding recipe because it's so easy!

But oh well, this blog IS called Quick and Easy Recipes. So okay, we'll just compromise and call it a Banana Pudding Method.

I've called it "Easy as Simple" after a phrase my daughter used when she was 4. She said something was "as easy as simple" - I don't remember what she was talking about, but the phrase was so cute and stuck in my mind!

You will need:
  • 1 Lg pkg Jello Brand Vanilla Instant Pudding (you will be mixing this according to package directions, so you will also need 3 cups milk)
  • 2 medium to large very ripe bananas
  • Vanilla Wafers
  • Cool Whip, or other brand of non-dairy whipped topping, defrosted (Cool Whip Free is great if you want to reduce fat and calories)
Lay some vanilla wafers in the bottom of a 2 qt dish (I use a clear square Pyrex casserole dish)

In a separate bowl, mix the Milk with the Vanilla Instant Pudding together with a whisk for 2 minutes.

Pour some of the pudding over the vanilla wafers that you already put in the dish. Slice one of the bananas and scatter the slices over the top of the pudding. Pour a little more pudding on top of that. Spread some of the non-dairy whipped topping over the top.

Repeat as many times as you have room in the dish to do so!

If you want to have a fancy finished look to it, you can end with the whipped topping and crumble up some vanilla wafers in your hand and sprinkle over the top, and/or you can take a couple vanilla wafers and stick them in the middle of the top vertically, so it looks like the letter "V."
Or, a vanilla wafer butterfly. Whatever. :)

"Technically," this should serve about 6-8. But if you are a realist or you are having a lot of people over, just double this up. Certain people (ahem....me) eat more than we should.

"Dump" Cake Recipe - like peach cobbler...

This recipe with the unappetizing name is actually very good.
A nice dish for fall and winter. I hope you enjoy it.

DUMP CAKE

2 cans sliced peaches or whatever canned fruit you like. (Cherry is very good)
1 yellow cake mix, any brand
1 stick of butter

Pour cans of peaches or the fruit of your choice (including the liquid or syrup) into a 9x12" baking dish.

Sprinkle the cake mix on top of the peaches, spread it a little bit for evenness, but do not stir.
Cut margarine stick into pats and place pieces of margarine all over the top of the cake mix.

Bake in 350 degree oven for approx 35-40 minutes, or until top is browned slightly or browned to your preference.

Let cool for about 10-15 minutes before digging in...each serving is nice topped with Cool Whip or vanilla ice cream but that is optional.

You can make this with whatever canned fruit you like...cherry pie filling is also a nice fruit for this...it is like a cobbler.

If you want to fix this only for 2-3 people, then use only 1 can of fruit, 1/2 box of the cake mix, and 1/2 stick of margarine and prepare it in an 8"x8" baking dish.

Orange Salad

Orange Salad

2 packages *dry* orange jello
1 large container cottage cheese (even those who don't like cottage cheese -
like me lol - usually love this recipe anyway!)
2 cans crushed pineapples drained
2 cans mandarin oranges drained and chopped
1 container cool whip

Mix all ingredients together in large bowl, chill, and serve.
